There is no recipe with minced meat in classic Italian cuisine, but years of cooking this dish, which has spread throughout the world, has made almost any variation of this dish possible.

Risotto with minced meat and vegetables

Ingredients:

  • minced beef - 500 g;
  • onions - 1 pc.;
  • garlic - 2 cloves;
  • salt, pepper - to taste;
  • arborio rice - 1 tbsp.;
  • meat broth - 3 1/2 tbsp.;
  • white wine - 1/2 tbsp.;
  • carrots - 1 pc.;
  • grated Parmesan - 1/2 cup;
  • vegetable oil;
  • green onions.

Preparation

In any thick-walled container, fry the onions with grated carrots until half cooked. Add chopped garlic to the vegetable sauté, fry it for 30 seconds and add minced meat. Stirring constantly, cook the minced meat until it changes its color to golden brown. Now you can add rice to the minced meat and pour wine over everything. As soon as the wine has evaporated, begin adding a ladle at a time until completely absorbed. In this case, the risotto must be stirred constantly. As soon as all the broth has been absorbed, the rice can be removed from the heat, mixed with grated Parmesan and served, sprinkled with chopped green onions.

If you are preparing risotto with minced meat in a slow cooker, then use the “Rice” or “Porridge” mode during cooking, constantly stirring the contents of the bowl.

Ground beef risotto recipe

Ingredients:

  • minced beef - 500 g;
  • olive oil - 4 tbsp. spoons;
  • onions - 1 pc.;
  • arborio rice - 250 g;
  • chicken broth - 1.2 l;
  • tomatoes in their own juice - 400 g;
  • grated parmesan - 50 g.

Preparation

Roll the ground beef into small meatballs and fry them until golden brown in olive oil.

In a separate bowl, fry the onions until translucent, and then mix them with arborio rice. After a couple of minutes of frying together, pour in 2 ladles of broth and add the tomatoes in their own juice. Wait until most of the liquid has evaporated, and then continue adding broth, stirring the rice constantly.

As a result, you should end up with a thinner risotto than usual, which should be served in deep bowls, generously sprinkled with cheese and placed the meatballs on top of the dish.

If desired, the minced meat can be stewed directly with the rice; first fry it with onions. It is better to serve this dish with a slice of fresh bread and a glass of dry wine.

Some may think that risotto with minced meat is nothing more than ordinary rice with meat stewed in broth. There is some truth in this, but no one bothers you to do everything correctly, observing all the nuances of preparing risotto, and get an original gourmet dish for dinner, even if it is not too difficult to prepare. For risotto, you can use a special variety of rice, such as Arborio. Or you can get by with a regular long or round one - so that the dish turns out more boiled, and not with a crumbly structure.

  • 2 cloves garlic
  • 10 g butter
  • 250 g minced chicken
  • 150 g long rice
  • 1/2 tsp. salt
  • 1/5 tsp. dried thyme
  • 1/5 tsp. ground saffron
  • 1/5 tsp. ground black pepper
  • 350 ml broth
  • 1 green onion before serving

Preparation

1. Cut the peeled shallots into thin slices. Chop the peeled garlic very finely.

2. Melt butter in a frying pan. First you need to lightly fry the onion and garlic, making sure to stir. After a couple of minutes, add minced chicken to the pan. It can be homemade or store-bought. In any case, the minced meat must be fresh and of good quality.

3. Stir everything and fry the vegetables with the minced meat for about 7 minutes. Make sure that the minced meat does not dry out, that is, there should be some liquid left in the pan.

4. Now add rice to the pan. By the way, a deep saucepan with a thick bottom is also suitable for preparing risotto. Mix the rice with the minced meat and vegetables and fry for a couple more minutes.

5. Now pour the broth into the pan, add salt, dried thyme, ground black pepper and ground saffron. Mix everything and cover with a lid. You don't have to worry about it for the next 15 minutes, and then check if there is enough liquid. You can add if necessary.

One of the interesting options for preparing a popular dish is risotto with minced meat. In principle, minced meat can be anything - chicken, pork, beef, mixed in any proportions. One caveat - if you want to get a really tasty gourmet dish, then prepare the minced meat yourself at home, using the freshest and highest quality meat. Basically any rice can be used for risotto. Ideally, arborio, but round-grain or medium-grain will do.

  • 250 g minced meat;
  • 130 g rice;
  • 1 tsp. salt;
  • 15 g butter;
  • 1/5 tsp. saffron;
  • 1/5 tsp. dried thyme;
  • 300 ml broth;
  • olives and fresh herbs for serving.

Preparation

1. Peel the onion and finely chop it. You can also use garlic, but only to flavor the oil and the entire dish as a whole.

2. You can use any minced meat, for example, chicken or pork and beef. It is optimal to prepare minced meat yourself by grinding fresh meat through a meat grinder or using a food processor.

3. Melt a piece of butter in a frying pan. You can use refined vegetable oil. Place the minced meat in hot oil and fry over low heat, stirring and breaking large pieces of minced meat into smaller pieces with a spatula.

4. After 7 minutes of frying the minced meat, add the onions to the frying pan, stir and fry over low heat for another 5 minutes.

5. Pour rice into the pan.

6. Pour half the broth into the pan - you can use any meat broth that is not too fatty. Cover the pan with a lid and simmer all the ingredients for 10-15 minutes, until most of the broth is absorbed into the cereal.

7. Pour the remaining broth into the pan, add salt, ground saffron and dried thyme. Stir and cook the risotto with the lid closed until done - this will take 15-20 minutes.

Risotto is an excellent Italian dish made from special varieties of rice, which is prepared with various fillings. In this recipe I will tell you how to cook risotto with minced meat. Rice and minced meat are cooked separately and combined at the end. The finished rice has a pleasant creamy taste with the aroma of Parmesan and added herbs. Preparation:

Rinse and dry the rice. In a large skillet, melt half the butter.

Place the rice in the pan and fry it for 3-5 minutes. Be sure to stir the rice so that it is evenly saturated with butter.

Boil water in a kettle and add one glass of water to the rice. Cover the pan with a lid. When the water has completely evaporated, add another glass of water and so on again and again until the rice is completely cooked. Total cooking time is approximately 30 minutes. Rice should be cooked over low heat. Be sure to watch the consistency of the rice so that it does not overcook. Instead of water, you can use meat broth.

While cooking rice, you can put a Parmesan cheese crust in it for more flavor, and when the rice is ready, remove it. Add the remaining butter and grated Parmesan to the finished hot rice. Season the rice with salt, pepper and dried herbs. The risotto rice is ready.

While cooking the rice, peel and cut the onion into small cubes. Heat some odorless sunflower oil in a frying pan and fry the onion, stirring occasionally, until golden brown for 15 minutes.

Place the minced meat into the fried onion. If you use frozen minced meat, you must first defrost it. Fry the minced meat over low heat while stirring for 15-20 minutes. First, you need to fry the minced meat over high heat until white, and then reduce the heat and cook the minced meat over low heat under a closed lid.

5 minutes before the minced meat is ready, add chopped tomatoes in their own juice along with the juice to the pan.

Season the finished minced meat with salt, pepper and dried herbs. Rice and minced meat are salted separately, so they are better salted.

Combine rice with cooked minced meat.

Gently mix the rice with the minced meat with a spoon, taste for salt and add more salt if necessary.

The meat risotto is ready, serve it hot, sprinkled with grated Parmesan and garnished with a sprig of basil or parsley. An excellent addition to risotto with minced meat would be a glass of dry red wine.
